Only the freshest harvests are used for this olive oil. No blending with older crops ensures pure quality and authentic taste.

Polyphenols - 255 mg/kg

Polyphenols are natural compounds found in plants, especially in olives. They are a type of antioxidant, which means they help protect our cells from damage caused by harmful molecules called free radicals. This makes them beneficial for health in several ways.

Gentle Production Process + Cold pressed

The olives are not only carefully handpicked, but also harvested using special vibrating machines. This method protects not just the delicate fruit, but also the surrounding nature – and even animals that may be hiding among the branches.

The oil is extracted through cold pressing under 27°C, retaining all valuable nutrients and its rich aroma.

Acidity - 0,45%

Our extra virgin olive oil boasts a low acidity of way under 0.8%, ensuring a smooth, balanced flavor that enhances the natural richness of every dish.

Origin - Thassos, Greece

Thassos, Greece, is celebrated for its high-quality olives and traditional olive oil production. Studies by the University of Athens revealed that Thassos olive oil contains twice the amount of Oleocanthal and Oleacein compared to average olive oils. These compounds are known for their anti-inflammatory and antioxidant properties.

This is how one of the world's finest olive oils is created.

Thassos’ unique microclimate nurtures the rare Throumba olive naturally smaller, rich in polyphenols, and hand-picked at peakripeness. The result: a low-acidity, aromatic, and full-bodied olive oil.

What Are Polyphenols and Why Are They Important in Olive Oil?

Polyphenols are natural compounds found in plants, especially in olives. They are a type of antioxidant, which means they help protect our cells from damage caused by harmful molecules called free radicals. This makes them beneficial for health in several ways.

Why Do Polyphenols Matter in Olive Oil?

Health Benefits

  • Anti-inflammatory: Polyphenols can reduce inflammation in the body, which is linked to many chronic diseases.
  • Heart Health: They help lower bad cholesterol (LDL) and improve blood vessel function.
  • Brain Protection: Polyphenols may support brain health and protect against cognitive decline.
  • Overall Antioxidant Power: They boost your body’s ability to fight oxidative stress.

Taste and Quality

  • Polyphenols contribute to the rich, slightly bitter, and peppery flavors of high-quality olive oil.
  • They ensure a longer shelf life for the oil, as they naturally prevent it from going rancid.

Higher in Premium Olive Oils

  • Not all olive oils are created equal. The best olive oils, like extra virgin varieties, are made from carefully harvested, high-quality olives and retain the most polyphenols.
  • Industrial or overly processed oils often lose these beneficial compounds.
